Chocolate Chip Biscotti

First I will say, I think I had some passive aggressive issues going on when I made this recipe.  You may notice that it’s the third biscotti recipe on this site, and that I hardly ever make any other type of cookie.  In fact, I made this recipe “for my fiance,” after his plane was delayed and he had been traveling for a painfully long afternoon/evening.  I thought, ‘oh, what a nice thing I could do.  I could make him biscotti.’

Except Chad doesn’t really like biscotti, or at least nowhere near as much as I do.  So Chad politely at a piece or two of biscotti, and guess who ate the rest of the batch?

*looks around guiltily*

Gee, I don’t know.  We must have had a party or something I’ve forgotten about.

So if you happen to be a biscotti nut like me (er… no pun intended), feel free to bake a batch of these “for someone else.”


Chocolate Chip Biscotti

3 tbsp olive oil
1/2 cup sugar
1 tsp vanilla extract
1 egg
1 cup flour
1/8 tsp salt
2/3 tsp baking soda
1/2 cup semisweet chocolate chips

Preheat the oven to 300 degrees.
In a large bowl, mix together oil and sugar. Mix in the vanilla and egg.  Add 1 cup of flour, salt, and baking powder, and stir thoroughly.  Add chocolate chips and mix until incorporated evenly.

Form the dough into a thick logs on a parchment-lined cookie sheet.  Bake for 35 minutes, or until log is slightly golden. Remove from oven, cool for 10 minutes. Reduce heat to 275 degrees.

Cut the log at a diagonal angle (approximately 30 degrees) into 3/4? thick slices.  Lay cookies on their sides on parchment cookie sheet. Bake approximately 9 more minutes, cool, and serve.

Makes 10-12 large biscotti.
