After my trip to New York this weekend, I’ve started to get autumn on the brain — even though we’re off for a week on the beach and Texas is still in the middle of summer, weather-wise!
But one of the best things about this time of year is thinking about holiday baking! Whether you’re going to a friend’s party or hosting your own, everyone needs a great, easy dessert recipe to whip up in almost no time.
Making fudge is normally a big endeavor — but because this recipe is heavy on the already-nearly-solid ingredients, it comes together easily without the fuss of a candy thermometer or lots of complicated steps. So all you need a beautiful serving dish, like this Noritake Colorwave setting ! I mixed the Chocolate and Raspberry colors for a holiday feel that stays on trend year-round.

Easy Peanut Butter Fudge
12 tbsp butter
3/4 cup peanut butter
1/4 tsp salt
1 teaspoon vanilla extract
1/2 cup white chocolate, broken into small pieces
3 cups powdered sugar
Melt butter in a medium saucepan over medium heat. Stir in peanut butter, vanilla, salt and white chocolate. Bring to a boil and immediately turn down the heat, stirring frequently. Cook on low heat until the mixture is smooth and all the chocolate is melted, about 3-4 minutes, and remove from heat.
Mix in the confectioners’ sugar with an electric mixer and beat until smooth. Pour into a baking dish (approximately 8″ by 8″) and refrigerate for at least an hour, or until firm, and then cut into pieces.
Makes about 24 pieces.
