This sounds wonderful! I absolutely adore the taste of roasted garlic, but especially spring garlic is very nice. I hadn't thought of using it in a bruschetta!

this sounds great! spring/green garlic is actually quite popular here in Germany, and it's available many months of the year (probably greenhouse grown, but somehow with garlic it doesn't bother me as much as say, tomatoes). Anyhow, I'll definitely have to give this a try. Have you ever tried making soup from the spring garlic? though it sounds intense, it's actually quite delicious
