1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
2 large eggs, separated
3 tablespoons melted butter or vegetable oil
1 3/4 cups milk
1 teaspoon vanilla extract

, 1 3/4 cups all-purpose flour Preheat a waffle iron according to manufacturers instructions. In a medium bowl, whisk together the vanilla extract, milk, melted butter or vegetable oil, egg yolks and salt until combined. In a separate bowl, whisk together the baking soda, baking powder and flour until combined. Add the dry ingredients to the wet ingredients and mix until just combined . The batter should be slightly lumpy. In a separate bowl, beat the egg whites until stiff peaks form. Gently fold the egg whites into the batter until just combined . Grease your preheated waffle iron with cooking spray or butter and spoon in enough batter to fill each section of your waffle iron . Close the lid and cook for 2-3 minutes or until golden brown and cooked through. Serve immediately with desired toppings such as syrup, fresh fruit or whipped cream! Enjoy!.
