Ingredients
1 pound dried cannellini beans, soaked overnight and drained
1/4 cup extra virgin olive oil
2 cloves garlic, minced
1 large onion, diced
2 carrots, diced
2 celery stalks, diced
1 teaspoon dried oregano
1 teaspoon dried thyme
1 bay leaf
3 cups vegetable broth or water
Salt and freshly ground black pepper to taste
Directions
Begin by setting your Instant Pot to the sauté setting. Add the olive oil, onion, celery, carrots, garlic, oregano, thyme and bay leaf. Sauté for 5 minutes until vegetables are softened. Add the drained beans and vegetable broth or water to the pot and stir to combine. Secure the lid on the Instant Pot and set it to manual high pressure for 25 minutes. Once cooking time is complete, allow pressure to release naturally for 10 minutes before releasing any remaining pressure manually. Carefully remove lid from pot and season with salt and freshly ground black pepper to taste. Serve warm with your favorite accompaniments!.
