Ingredients
1/2 cup graham cracker crumbs
2 tablespoons butter, melted
1 package cream cheese, softened
1/4 cup sugar substitute
1 teaspoon vanilla extract
1 can pumpkin puree
3 eggs
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon ground ginger
Whipped cream for topping
Directions
Preheat oven to 350 degrees F . In a small bowl, mix together the graham cracker crumbs, melted butter, and sugar substitute until well blended. Press into the bottom of a 9 inch pie plate. Bake for 8 minutes in preheated oven. Set aside to cool. In a medium bowl, beat cream cheese until smooth. Beat in eggs one at a time until fully incorporated. Beat in pumpkin puree, vanilla extract, ground ginger, nutmeg and cinnamon until smooth and creamy. Pour into cooled crust. Bake for 40 minutes in preheated oven or until center is almost set when lightly shaken. Allow to cool before serving with whipped cream if desired. Enjoy!.
