Ingredients
2 tablespoons olive oil
1/2 pound ground turkey
1/2 pound chorizo sausage, casings removed
1 small onion, diced
2 cloves garlic, minced
2 cups cooked sweet potatoes, mashed or cubed
Salt and pepper to taste
8 large flour tortillas
1 cup shredded cheese of your choice
Optional toppings: salsa, sour cream, guacamole
Directions
Preheat oven to 350 degrees F. Heat olive oil in a large skillet over medium-high heat. Add garlic, onion, chorizo sausage and ground turkey. Cook until the meat is browned and cooked through, about 10 minutes. Add sweet potatoes to the skillet and season with salt and pepper to taste. Cook for an additional 5 minutes or until the sweet potatoes are heated through. Place a large spoonful of the mixture onto each tortilla and top with desired toppings . Roll up each burrito tightly and place on a baking sheet lined with parchment paper or aluminum foil. Bake for 15 minutes or until the burritos are golden brown and heated through. Serve warm or freeze for later use!.
