Ingredients

1 head of cauliflower, grated

2 eggs

1/4 cup almond flour

1/4 teaspoon garlic powder

1/4 teaspoon onion powder

Salt and pepper to taste

Directions

Preheat oven to 375°F . Grate the cauliflower using a box grater or food processor. Place the grated cauliflower in a microwave-safe bowl and microwave for 4 minutes, stirring halfway through. Transfer the cooked cauliflower to a clean kitchen towel and squeeze out as much liquid as possible. In a medium bowl, combine the cooked cauliflower, almond flour, onion powder, garlic powder, salt and pepper to taste, and eggs until well combined. Divide the mixture into 8 equal portions and shape each portion into a round tortilla shape on a parchment-lined baking sheet. Bake for 20 minutes or until golden brown and crispy on the outside. Serve warm with your favorite toppings!.
