Tahini Muffins with Figs Recipe

Ingredients
2 cups all-purpose flour
1 teaspoon baking powder
½ teaspoon baking soda
¼ teaspoon salt
½ cup tahini
½ cup honey or maple syrup
2 eggs, lightly beaten
¼ cup olive oil or melted coconut oil
1 teaspoon vanilla extract
½ cup chopped dried figs
Directions
Adjust oven rack to middle position and preheat oven to 375 degrees F . Line a 12 cup muffin tin with paper liners. Pour boiling water over figs and let stand for 10 minutes to soften, then drain.
