Black Garlic From 'Bar Tartine'

Ingredients
2 heads of black garlic
1/4 cup olive oil
1 teaspoon sea salt
1/2 teaspoon freshly ground black pepper
2 tablespoons fresh lemon juice
2 tablespoons chopped fresh parsley
Directions
If using a dehydrator, wrap the garlic heads in plastic wrap. This traps humidity and prevents the garlic from drying out. Then wrap the heads in several layers of aluminum foil. Hold at 130 degrees F/55 degrees C until the heads are soft and black, about 3 weeks.
