Ingredients
2 pounds beef neck bones
2 tablespoons olive oil
1 large onion, chopped
4 cloves garlic, minced
2 carrots, peeled and chopped
2 stalks celery, chopped
1 can diced tomatoes with juice
1/2 cup red wine
2 cups beef broth
2 bay leaves
1 teaspoon dried thyme
Salt and pepper to taste
Directions
Preheat oven to 350 degrees F . In a large bowl, season the beef neck bones with salt and pepper to taste. Add thyme, bay leaves, beef broth, red wine, diced tomatoes with juice, celery, carrots, garlic and onion; mix well. Heat olive oil in a large Dutch oven over medium-high heat. Add the beef neck bones and cook until browned on all sides, about 5 minutes per side. Pour in the prepared mixture from the bowl and bring to a boil. Cover and transfer to preheated oven. Bake for 2 hours or until meat is tender and cooked through. Serve hot with your favorite side dishes. Enjoy!.
