Ingredients

3 cups

1 cup almonds, chopped

1/3 cup ground flax seeds

1/4 cup coconut oil, melted and cooled slightly

1/3 cup honey

1/3 cup packed light-brown sugar

1/2 tsp vanilla extract

1/4 tsp almond extract

1 large egg white

1/4 tsp fine sea salt

Directions

Preheat oven to 325 degrees . Line a rimmed 18 by 13-inch baking sheet with parchment paper, set aside. In large mixing bowl lightly toss together oats, almonds and ground flax seeds. In a medium mixing bowl whisk together coconut oil, honey, brown sugar, vanilla extract, almond extract, egg white and salt until very well blended. Pour honey mixture over oat mixture and toss well until evenly coated. Pour oat mixture onto prepared baking sheet and spread into an even layer. Bake in preheated oven 13 minutes, remove from oven and flip granola with a spatula and spread back into an even layer. Continue to bake until granola is just lightly golden brown, about 12 - 17 minutes longer . Let it cool completely, break into clumps then store in an airtight container.
