Savory Shortbread Squares

I got the idea for these from the December issue of Bon Appétit, which featured a recipe for Savory Parmesan Shortbread Rounds.  With that in mind, I changed the proportions a little, and used parmesan, paprika, and a little garlic powder, and these delicious little shortbread crackers were born! I will definitely be experimenting with more variations on this recipe — these were super easy and really good.

Savory Shortbread Squares

2/3 cups all purpose flour1 tbsp water
1/3 cup plus 1 tbsp grated Parmesan cheese
1/2 teaspoon coarse kosher salt
1/2 tsp garlic powder
1/2 tsp paprika
1/3 cup unsalted butter, cut into 1/2-inch cubes

1. Preheat the oven to 350 degrees.
2. In a food processor, combine all ingredients. Pulse until a solid lump of dough forms.
3. On a floured surface, roll dough out to 1/2″ thickness or less. Cut into squares (or any shape you want to use)!
4. Place shortbread squares on a greased baking sheet. Bake for 8-10 minutes, or until edges are golden brown. Cook on a wire rack, and serve!

Makes about 3 dozen small squares.
