Max Brenner: Chocolate

No, it’s not my love story (although I think every one of us has a love story with chocolate buried somewhere in our past).

It’s Max Brenner’s.  For those of you who don’t know, Max Brenner is the most amazing restaurant in New York for dessert-o-philes.  Their dessert menu is, I am fairly sure, at least 30 pages long, and consists of amazing creations like chocolate pizza, chocolate waffles, fondue, s’mores, and a zillion different versions of hot chocolate.  Help — I think I am actually gaining weight just by typing this out.

So, when the company offered me a copy of their book (full disclosure: for free!), I immediately thought of you guys.  As in, “can I give one of my lucky readers a copy of this amazing book?”

Because who doesn’t want to learn how to make chocolate pizza?

Fortunately, the answer was yes, so one winner will be getting a copy of this book as well!  (Only residents of the US and Canada this time — sorry!)   To enter, leave a comment telling me your favorite chocolate creation.  I’ll announce the winner a week from today — good luck!

    Oh lordy, I would have to say the lovely, decadent “Hot Chocolate Lava Cake” at Jae’s Spice in the Berkshires, Massachusetts.
    It’s fabulous texture is heaven… literally, heaven. It is smooth, creamy, just solid enough to not fall apart, and they give it to you warm , overwhelming ever sense you have.
    I could probably OD on it, given the chance.. it wouldn’t be an entirely horrible way to go.

    Dark chocolate cayenne flourless cake.  With a blob of freshly whipped cream.  And maybe a sprinkle of nutmeg.

    The chocolate covered cinnamon bears from the hospital cafeteria that I subsist on while I’m on call are pretty good, though, too.

    Oreo truffles and chocolate covered caramel popcorn.  I also love chocolate lava cake and bonbon cake!!!  Anything chocolate is good with me!!!!!!!!!!!!

    Chocolate cake, chocolate ice cream, chocolate cookies, chocolate cupcakes, and need I go on?!  But I would have to say my absolute favourite would have to be dark chocolate fudgy brownies warm from the oven with a scoop of vanilla icecream melting down the sides….yuuummm!!!

    Oooh fun! I’ve been really into chocolate and peanut butter lately. Chocolate cupcakes with peanut butter frosting were my latest creation.

    Gosh-I don’t know if I can pick just ONE favorite chocolate creation. I guess if it comes right down to it, I’d pick chocolate chip cookies over anything else. It’s a hard choice though.

    I’ve looked at Max Brenner’s menu online-many times!-and it looks SO good. I’d LOVE that book!!

    Wow! Sounds like my kind of book.  I love chocolate fondue, especially mixed with caramel and pecans.  Just about anything dipped in that is scrumptious.  Thanks for the giveaway!

    I have to go with chocolate dipped fruit. Dark chocolate with dried apricots, and white chocolate on blueberries – absolutely to die for!

    Oh lord. P.F. Chang’s has an amazing flourless chocolate cake with a raspberry syrup over it. I’m in heaven every time I take a bite.

    my favourite is chocolate chai cupcakes, from a bakery called Cocoa Locale in Montreal… I’ve tried to recreate them but never get it quite right.

    My favorite is David Lebowitz’s Orbit Cake, hands down!  Suitable only for serious chocoholics!

    Wow, I don’t know if I can pick just one… but my most recent recipe with chocolate is a copycat recipe on butterfingers candy bars. It tasted the same, but better then the actual candy bar! I also love mexican hot chocolate, which frequently comes out on the weekends since its been cold. White chocolate cream brulee is on the top of my list too.

    My favorite creation is the Death by Chocolate buffet. To quote:

    My favorite chocolate creation is definitely the Luxury brownies from cocoaandme.com (which I found via chocolateandzucchini.com). They are made with almond butter and they’re the most decadent dessert I can think of. Love them!

    Its a two-way tie for me, between:

    This amazing raspberry chocolate bark from this old fashioned general store in Cape Cod. Its dark chocolate bark with real bits of raspberry in it, and then broken into random chunks and packaged.

    Or,

    TimTams. Anyone who’s from Australia or has been to Australia will know this sinful cookie. Chocolate wafer with chocolate cream between the two, and the whole thing covered in a layer of chocolate. Then, to do a TimTam-Slam, you bite off both ends and use the TimTam as a straw for hot chocolate or tea: the wafer will dissolve and you shove the whole thing in your mouth and let it melt…I’m drooling on my keyboard again.

    My favorite use of chocolate is one that I made for my now-wife, when we just started dating.

    Three layer chocolate mousse

    It’s from the TV Show “How to cook like a chef” and I think it’s Ned Bell’s recipe

    Take 3 100g high quality chocolate bars of white, milk and dark variety and in chop into separate bowls .

    Whip up one carton of whip cream and keep in the fridge.

    Heat some milk to just shy of boiling

    Starting with the dark chocolate, mix it in a pan over heat with just enough milk to melt it, then fold in 1/3 of the whip cream.

    Split between 4 glasses and place glasses in freezer to cool.

    Proceed with the milk, and white chocolate.
    Be careful to keep your glasses clean and layers flat.

    The key is to use just enough milk to melt the chocolate and not get it too watery.

    Also watch the ratio of chocolate to whip cream, it’s not that hard to mess up, you’ll know what’s correct by looking at how mousse like it looks.

    Use a wine glass, or martini glass for best results.

    This is one of the best uses of chocolate I’ve ever come across…

    My favorite chocolate dessert (one of them) is my chocolate angel pie. The crust is made from saltine crackers and the filling has German chocolate and then I make little squirres out of melted chocolate, chill and stand them up in each piece of pie. I will post soon.

    My second favorite dessert (I know you didn’t ask) is a class of chambord with a silver tray full of Hersey’s Chocolate nuggets.

    My favorite chocolate dessert is any one I don’t have to cook! My daughter made this recipe of a short bread crust, a layer of a cream cheese and sugar mixture, a layer of thick chocolate pudding and then the final layer of cool whip sprinkled with chocolate shavings. It has been described as SEX in a pan.

    Liquid chocolate like they make in Eastern Europe.  I know it’s “just” hot chocolate but it’s so much more decadent!

    As I was trying to duplicate the recipe for McCormick and Schmick’s Chocolate Bag (fresh fruit and white chocolate mousse in an edible chocolate bag), I failed horribly at the mousse, so I made my own creation out of things I had on hand.  For the chocolate “bag”, I dipped silicon muffin cups in melted chocolate and then peeled the cups off after it was cooled.  The cream is made out of Cool Whip and cream cheese, flavored with honey and limoncello.  Add fresh fruit and it’s a delicious, elegant dessert that’s actually really easy to make!

    I like to make chocolate cake for one in a mug when the cravings hit. Five ingredients, three minutes in the microwave. Yum! But also Tim Tams do hit the spot.

    When my husband & I were first married, for our first Valentine’s Day I made this amazing dessert: you melt chocolate & pour it into a coffee bag (like you use for getting beans at the grocery store) & spread it around the bottom & about 2 inches up each side. Chill until quite firm & gently tear the bag off so that you have a little open box of chocolate. Pour about a 1/4 inch of ganache in & let chill, then layered whipped cream, mousse & toffee bits. It was incredibly rich & delicious!

    By far the best chocolate dessert in our area is one that is no longer on the menu at the restaurant, Granite City Food and Brewery. It is called Triple Chocolate Cake and consisted of layers of chocolate and white cake between this delicious white and dark chocolate buttercream frosting. The buttercream is firmer than usual, and just melts in your mouth. This is drizzled with hot fudge and caramel and topped with whipped cream. I nearly cried when they took it off the menu, only to rejoice later when I found it at our local upscale grocery store. Yes!

    chocolate ganache is one of my all-time favourite chocolate creations. we put it on icecream sundaes when we have left-over ganache from birthday cakes.

    but – my NEW favourite thing is little chocolate shot-cups. i had them at a wedding with irish cream in them – and now i’m going to figure out how to make them myself. edible chocolate shot glasses – mmmm.

    Anything chocolatey is ideal for me. Double chocolate cookies are easy and amazing, and Art Park brownines from Rachael Reich’s book are the same. I recently had a chcocolate creme brulee which was positively heaven in a dish! I’d love to learn how to make that.

    One of the most amazing things I ever made was Mocha Almond Fudge Ice Cream.  I got the recipe from a blog called The Chocolate Gourmand.

    I just can’t pick one chocolate dish that I love the most because I love most of them!  My favorites are something that is soft and cakey but then has something crisp or crunchy on top.  But not nuts – I’m not a fan of nuts.  I prefer something like toffee on the sides of a cake or in the filling.  Yum….

    Probably chocolate mousse is my favorite. But really anything that is quite rich. I love the “chocolate mousse for two” from Whole Foods. It is a small chocolate layer cake with layers of cake and ganache, entirely dipped in dark chocolate. There is also a puff of chocolate buttercream frosting on top of all of that. Because it’s small, there is a lot of surface area, so you get a lot of outer chocolate crust. Definitely one of my favorite desserts!

    Trying to pick a favorite chocolate creation is like trying to pick a favorite book… it changes on my mood. 

    However, the top of the running includes my aunt’s chocolate cheesecake, my granny’s fudge brownies, and my own chocolate lush- which is similar to a lava cake, but not quite.

    i love (anything) chocolate!  currently, i would have to go with oatmeal chocolate chip pecan cookies as my favorite — but on any given day, a rich dark chocolate cake (no icing) with fresh whipped cream is my favorite!

    When I was growing up I remember my mom making Baked Alaska.  From the first moment I saw it out of the overn I thought it was the coolest chocolate dessert that I had ever seen… and it still is.

    Well to pick out just one favorite.. It is not easy.
    One of the desserts that I always go back when I am in need of comfort and flavor is Double Layer Borwnies, from the book Bake it to the Limit ( Dede Wilson) . This is a confection with a brownie base with toasted walnuts and espresso, topped and baked with a layer of ganache.  I serve it topped with an espresso bean covered in dark chocolate.  I am baking a batch tonight mmmm.

    There are a million different ideas swimming through my head. However, the thing that sticks out in my mind is a cupcake I had recently:

    Mexican Hot Chocolate cupcake

    Dark chocolate cupcake flecked with cayenne
    Cinnamon buttercream frosting with cayenne
    Cinnamon-covered marshmallow on top

    I have a love affair with chocolate. My favorite all-time was a chocolate cake with chocolate ganache between the layers and drizzled over the top with some chopped & toasted walnuts sprinkled around. Yum! A good frosted chocolate brownie is an everyday favorite. I guess there’s no questioning why I’m packing around a few extra pounds :)

    Any chocolate and peanut butter combination has my attention.  I’m always trying new things in the chocolate realm, though.  I am experimenting on my own and have made some wonderful champagne truffles.  Those are my fav!

    And I love Max Brenner – especially his philosophy on chocolate!

    Oh man, just one?  That’s really tough – especially since I think it’s hard to top the purity of a really good bittersweet chocolate eaten out of hand and tasted with the mindfulness used when enjoying a class of fine wine.  For my money, it doesn’t get any better than Scharffen Berger 70% Bittersweet.

    But if we have to talk creations, then it’ll probably have to be World Peace Cookies (http://food.jitterbeangirl.com/archives/000768.html).  When made with really good chocolate (see above for my poison of choice!), these cookies are delightfully rich and decadent and extremely satisfying – and you don’t have to slave over them for hours or try to get a difficult restaurant reservation to enjoy them :)

    honestly, all chocolate desserts are amazing, but you just can’t beat a warm, soft, chewy chocolate brownie with a scoop of cold, rich, homemade buttery vanilla ice cream on top…. the most simple dessert, but the most comforting, fulfilling dessert there ever was. add caramel to the middle of the brownie and/or toffee bits on top and its completely different feeling, equally amazing.

    Hands down.. CIOCCOLATA CALDA CON PANNA at Rivoire in Piazza della Signoria in Florence!

    This true Italian hot chocolate is so thick, rich and decadent.  Actually more like a meal than a beverage.  Just thinking about it takes me back to our recent trip to Italy!

    A little children’s book, Why God Made Chocolate introduces little children to a correct principle…anything as good as chocolate has to be from a heavenly source!  HaHa.  My fave to eat are chocolate lava cakes and my favorite to make is a fabulous chocolate dipping sauce for beautiful strawberries made from melting either Milky Way Bars or Snickers Bars with cream carefully in the microwave, stirring every 30 seconds to the right consistency.  You will die and go to heaven immediately!!!
