No joke, this may be the best loaf of banana bread ever made.

Sometimes I buy bananas, even though I know that Chad and I won’t eat them.  I do it on purpose, because I know they’ll sit there on our counter and ripen and ripen, until they’re just screaming to be made into banana bread.

There are some recipes that are just better than the sum of their parts — and this banana bread is without a doubt better than bananas, honey or cinnamon on their own.

In other news, I’m trying to give up caffeine this week — easier said than done, right?  I feel pretty wretched, so it’s nice to have a special treat like this when I wake up and all I want is coffee or soda.  I’m hoping that the misery of the caffeine withdrawal will make me feel better and healthier in the long run, though.

What do you guys think?  Have you ever tried giving up coffee?  It’s 10:28 right now and I’m about to go curl up in bed with Bossypants, which is just as terrific as everyone told me it would be.

Honey Vanilla Banana Bread

INGREDIENTS

3 large ripe bananas, smashed
5 tbsp melted butter
3/4 cup sugar
1/4 cup honey
1 tbsp cinnamon
1 egg white
1 teaspoon vanilla
1 teaspoon baking powder
Pinch of salt
1 1/2 cups of all-purpose flour

DIRECTIONS

Preheat the oven to 350°F.  Mix together the butter, bananas, honey, cinnamon, egg white, baking powder, salt and vanilla.  Stir in the the flour and mix well.  Pour mixture into a loaf pan sprayed with cooking spray.  Bake for 1 hour.  Cool for ten minutes before serving.

    This looks really good! My fiance always eats bananas for breakfast, but sometimes I buy extra in hopes they get a little too ripe and I need to bake something delicious with them! This might be next on my list.

    I’m pretty sure I couldn’t ever let go of the coffee in my life…I’ve just been an addict for too damn long!  I’m not really a banana eater either but I do love letting them brown on my counter!  This bread sounds fantastic!

    I love that you love Bossypants, and I love this recipe! (My pal Megan at takeamegabite.com sent me.) I gave up caffeine two years ago. Believe me, if I can do it, so can you. I was getting horrible migraines and thought that my severe caffeine addiction might have something to do with it. And I was right. I still love the smell and ritual of coffee though and make myself a little decaf every morning. Good luck, lady!

    I feel SO much better this afternoon — this morning was rough, but now that the 48 hour mark has passed, it’s supposed to get a lot better.  I figure it can be a once-in-a-while thing after I’ve gotten it out of my system!

    I gave up coffee in February and have never felt better. I only drink green tea now, which has caffeine, but not nearly as much.

    Once the first few days pass and the headaches go away, you will feel much better and it will be easier to get up and get going in the morning.

    I made this recipe after work today after staring at three brown bananas in my fridge for the past week!

    I subbed in whole wheat flour because I did not have all-purpose. Still very yummy, and moist!

    Banana bread is one of my favorite quick breads and I have never tried cinnamon in it. Sounds yummy.

    I love bananas because they’re one of the only fruits that actually has a use when they…over ripen

    So I made this bread last night, it smelled so good baking!  I had a piece and thought, hmmmmm, not too sweet even!  Well, I didn’t add the sugar! Haha.  It didn’t say to, so I missed that ingredient as I was mixing them up in the bowl.  I like it just fine, though my husband probably won’t have a second piece. ;) I’ll try it again with the sugar.  Moist and dense though. Yum!

    just to let you know, you left the sugar out of the instructions part. I measured all the ingredients out beforehand, then follwed the steps you listed. When I was cleaning up after having put it into the oven I saw my bowl of sugar and felt pretty foolish for following so blindly! haha Luckily it hadn’t been cooking too long so i just took it out and stirred in the sugar.

    I added a streusel topping to mine (3 tbsp flour, 2 tbsp butter, 1/4 C brown sugar blended together with pastry blender) and reduced the sugar to 1/2 cup.  Never thought to add cinnamon before! Nice touch.

    I’m really enjoying the theme/design of your web site.
