Now there’s one good thing about Monday mornings, at least.

It was impossible, this weekend, to believe it was really still March.  We had several gorgeous days that felt like they belonged in May or June, and I was the happiest girl on the planet.  True to form, I took the warm weather as an opportunity to buy some fresh fruit and whip up a healthy, delicious breakfast smoothie.

It’s hard to believe that we were skiing last weekend!  I’m so looking forward to spring and summer this year — I know I am a broken record on this blog about how much I love warm weather, but this weekend just shows how much happier our whole city is when it’s finally warm and sunny out.  (Finally!)

This smoothie has no added sugar and is a perfect, vitamin-packed breakfast.  If every weekend could end with one of these, I’d have a lot more to look forward to on Mondays!

Mango Strawberry Smoothie Recipe

INGREDIENTS
1/2 mango
8-10 large strawberries, plus additional for garnishing
6 ounces vanilla yogurt

DIRECTIONS
Wash fruit and peel the mango from its shell.  Cut away the green parts of the strawberries.  Puree the fruit together in a food processor or blender, then and the yogurt and pulse until blended.  Serve cold, with a strawberry garnish.

Serves one.

    There’s something so lovely about the first warm day of the season – everyone is out and about and happy.  It was definitely a joy to walk around this weekend, aimlessly and WARM.

    I love the sound of this smoothie…strawberries and mangoes have to be two of my favorite fruits.

    Oh, that looks delicious!  I love how mangoes and bananas make smoothies so creamy.

    The weather was perfect here in Boston too but now it’s gone all cold and rainy on us again :(

    This smoothie looks absolutely delicious. Can’t wait to try it… Just wondering how you found a mango at this time of year? They aren’t in season yet are they? In Egypt mango season is in July/August I believe and we anxiously await them… my favorite fruit!!!!

    i actually found them at a little bodega near our apartment, so they must be pretty close to in season, because it’s not the place with the widest selection.  i had planned to do something simpler, but when i saw mangoes, i had to get them!

    dang!  yours looks all most as good as mine…but when one can pluck them ther strawberries fresh out of the garden…stick them inside a flour sack since I ain’t got one of them ther blenders…and stick tat sack in my shop vise and squeeze them to death…than milk my cow and strain it through tat flour sack and pour it all into a tin cup tat is made in America….but if you want it cold….the ice man only delivers box ice on Fridays….
