Ingredients

1/2 teaspoon baking powder

1/4 teaspoon baking soda

1/4 teaspoon salt

3 tablespoons butter, melted and cooled slightly

3 tablespoons coconut oil, melted and cooled slightly

3 tablespoons honey

2 large eggs, lightly beaten

1 teaspoon pure vanilla extract

For the Filling:

2 teaspoons ground cinnamon

2 tablespoons honey or maple syrup

For the Frosting:

4 ounces cream cheese, softened to room temperature

2 tablespoons butter, softened to room temperature

1 cup powdered sugar

Directions

Preheat oven to 350 degrees F . Grease a 9-inch round cake pan with butter or nonstick cooking spray. In a medium bowl, whisk together the eggs, honey, coconut oil, melted butter, vanilla extract, salt, baking soda and baking powder until well combined. Set aside. In a separate bowl, cream together the softened butter and cream cheese until light and fluffy. Add in the powdered sugar and mix until combined. Add in the optional honey or maple syrup if desired and mix until combined. Set aside. Pour the egg mixture into the prepared cake pan and spread evenly with a spatula or spoon. Sprinkle with cinnamon and drizzle with melted butter if desired. Bake for 25 minutes or until golden brown on top and a toothpick inserted into the center comes out clean. Allow to cool completely before frosting with cream cheese frosting .
