Ingredients
2 tablespoons olive oil
2 pounds beef tenderloin, trimmed and tied
Salt and freshly ground black pepper
1/4 cup butter
1 large shallot, minced
8 ounces cremini mushrooms, finely chopped
2 cloves garlic, minced
1 teaspoon fresh thyme leaves, chopped
2 tablespoons brandy or cognac
2 tablespoons all-purpose flour
1/2 cup beef broth or stock
2 tablespoons Worcestershire sauce
1 sheet frozen puff pastry, thawed according to package instructions
1 egg yolk beaten with 1 tablespoon water
Directions
Using butcher's twine, tie tenderloin at 1-inch intervals. Trim ends of twine. Season liberally with salt and pepper.
