Roasted Okra Chips from 'Mastering the Art of Southern Cooking'

Ingredients

2 pounds fresh okra, washed and dried

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

½ teaspoon ground cumin

½ teaspoon sea salt

¼ teaspoon freshly ground black pepper

Directions

Preheat oven to 375°F. In a small bowl, mix together the pepper, salt, cumin, paprika, onion powder and garlic powder. Place the okra in a large bowl and drizzle with olive oil. Sprinkle the spice mixture over the okra and toss to coat evenly. Spread the okra out on a baking sheet lined with parchment paper or aluminum foil. Bake for 15 minutes, then flip the okra and bake for an additional 10-15 minutes until golden brown and crispy. Serve immediately.
