Pork and Apples with Cider Cream Sauce

Ingredients
1 tablespoon olive oil
2 pork tenderloins, trimmed and cut into 1-inch cubes
1 large onion, diced
2 cloves garlic, minced
2 apples, peeled and diced
1/4 teaspoon dried thyme
1/4 teaspoon ground nutmeg
Salt and pepper to taste
1 cup apple cider or apple juice
1/4 cup heavy cream
2 tablespoons butter
Directions
To prepare pork, place medallions in between sheets of plastic wrap. Using a meat mallet or a heavy skillet, flatten each piece to an even thickness of about 1/4 inch. Remove plastic wrap and season both sides of medallions with salt and pepper.
