Ingredients
2 7 or 8 inch flour tortillas
1/2 cup shredded mozzarella
1 cup mixed vegetables from a salad bar
Pinch Italian seasoning or red pepper flakes
Directions
Preheat the oven to 400 degrees. Place the tortillas on a baking sheet or pizza pan. Bake for 5 minutes, or until golden brown. If the tortilla puffs up or develops a bubble, poke it with a sharp knife and press down to flatten. Chop or break up the vegetables into small, bite-sized pieces. Sprinkle about 1/4 cup shredded cheese over each tortilla, then top with the vegetables and a sprinkle of Italian seasoning or red pepper flakes. Bake the topped pizzas for 5 more minutes, or until the cheese is fully melted and the edges of the pizzas are slightly darker brown.
