Apple Chicken Quesadilla

A crisp folded quesadilla filled with chicken, cheese, apple, and salsa for a quick sweet-savory skillet meal.

Apple Chicken Quesadilla

Ingredients

  • 4 Flour tortillas
  • 1 cup cooked, shredded or chopped, chicken meat
  • 1/4 lb cheddar or Monterey jack cheese, sliced or grated
  • 1 apple, sliced
  • 1/4 cup salsa

Directions

  1. Set a large skillet over medium high heat and lay in a tortilla. Turn it over a couple of times with a spatula, then leave it alone until the tortilla warms through, air bubbles rise, and little sections start to swell. Turn it once more.
  2. Arrange the cheese over half the tortilla, keeping it at least 1/2-inch in from the rim. Scatter the chicken over the cheese, fold the bare side over the filling like an omelette, and give the folded tortilla a gentle press with your spatula. Turn the heat down to medium.
  3. If your skillet has the space, slide another tortilla in now so it can start warming while the first quesadilla finishes. Once the cheese in the folded quesadilla has melted, move it to a cutting board. Open it up, then add the apple slices and salsa.
  4. Close the tortilla again and slice it into 3 triangles, the way you would cut a pie. Repeat the same process with the remaining tortillas.
