Remember back when I made this strawberry rhubarb tart, and I promised you guys a cocktail recipe that features the same rhubarb syrup?  Well, this pretty little pink drink is it!

The best thing about this cocktail is that it’s hardly sweet at all.  I’m partial to cocktails that are light on the sugar and heavy on the less caloric ingredients like seltzer and fruit juices… and don’t even get me started on those pre-made mixes!  I can’t stand when I order a drink and it tastes too sweet for even dessert — who wants to start a meal off like that?

This, on the other hand, is incredibly light and refreshing, and it uses one of the freshest summer ingredients you can find.

Rhubarb Cocktail

INGREDIENTS

1/2 cup water
1 cup sliced rhubarb (1 large stalk)
1/4 cup sugar
1 teaspoon pure vanilla extract
2 ounces vodka
1 cup seltzer
Crushed Ice
Strawberries, for garnish

DIRECTIONS

In a small saucepan, cook the rhubarb on medium-low heat with 1/4 cup of sugar, vanilla extract and 1/2 cup of water until broken down and tender, about 20 minutes (add more water if it runs too low). 

Mix together 2 tbsp rhubarb syrup, 1 ounce vodka, and 1/2 cup seltzer for each drink, stir thoroughly, and serve over crushed ice.  Garnish with a fresh strawberry.

    I have a ridiculous sweet tooth but I agree — I hate it when my drinks are too sweet.

    First of all, I love you blog and been a follower for years now…Thank you for the many ‘tips’!!

    About this recipe, what would you substitute for vodka (can’t take alcohol as I am diabetic :).

    Hey Marlene!  You could substitute a little lemonade or grapefruit juice (if you want it a little tangier), or just leave it out altogether!

    Those cocktail mixes never fail to make me sick!  This sounds totally refreshing, though!

    Yum! I usually can’t do sweet either so I steer clear of drinks with strawberries, blueberries or peach and lean more toward pineapple, orange, or cranberry (because they’re sour). However, since the rhubarb is the main ingredient in this drink and the strawberry is just a garnish, I think I’ll try this! :)

    This sounds great! I made the tart this weekend and it was so delicious! I have never baked in my life, and did not think I would enjoy it but I had a great time. Thanks for such an easy/delicious recipe, and I cannot wait to try the cocktail = )

    I was just wondering what I was going to do with my four stalks of leftover rhubarb – now I know! Going to try this tonight, perhaps experiment with the little bit of Hendrick’s gin that I also have kicking around. I’m so excited! A great excuse for a mid-week, post-work cocktail.
