Ingredients
- 1.5 lbs. boneless, skinless chicken thighs
- 1 tsp smoked paprika
- 1/4 tsp garlic powder
- 1/4 tsp salt
- 1 Tbsp cooking oil
- 1/2 cup chicken broth
- 2 Tbsp stone ground or whole grain mustard
- 2 Tbsp honey
- 1 Tbsp butter
Directions
- Warm a large skillet over medium heat. As it heats, mix the smoked paprika, garlic powder, and salt in a small bowl, then season the chicken pieces on both sides with that mixture.
- When the skillet is hot, pour in the cooking oil and tilt the pan so the surface is coated. Lay in the chicken and cook until nicely browned and done in the center, roughly 5 minutes per side, depending on your pan and the size of the chicken pieces. Move the cooked chicken to a clean plate.
- Pour the chicken broth into the skillet, scraping and stirring to loosen the browned bits from the pan. Let the broth bubble for about 5 minutes, until it has cooked down by half.
- Add the mustard, honey, and butter to the skillet, stirring until the butter melts and the sauce comes together. Return the chicken and any collected juices to the pan, then let the sauce reach a simmer again. Spoon the honey mustard sauce over the chicken, then serve.
