5 Minute Fudgy Chocolate Microwave Cake

Ingredients

  • 3/4 cup all-purpose flour
  • 3/4 cup granulated sugar, divided
  • 3/4 cup cocoa, divided
  • 2 1/4 teaspoons baking powder
  • 1/4 plus 1/8 teaspoon salt
  • 2 large egg yolks
  • 6 tablespoons unsalted butter, melted
  • 2 teaspoons vanilla extract
  • 1/2 cup semisweet or bittersweet chocolate chips
  • 1 cup warm water

Directions

  1. In a shallow microwave-safe dish that holds 1 1/2 quarts, whisk together the flour, cocoa measured as 1/2 cup plus 2 tablespoons, 1/2 cup sugar, baking powder, and salt. Add the egg yolks, melted butter, vanilla, chocolate chips, and water, then stir just until the batter is nearly blended. A few lumps are exactly what you want here.
  2. In a small bowl, mix the remaining 2 tablespoons cocoa with the remaining 1/4 cup sugar. Scatter that mixture evenly over the top of the batter.
  3. Cook in the microwave on high power for 4 to 5 minutes, until the cake rises, bubbles, and looks set while still having a slight jiggle. Take it out carefully and serve it warm.
