Apple Cherry Baked Oatmeal

Ingredients

  • 1 cup frozen pitted sweet cherries
  • 1 1/2 cups unsweetened applesauce
  • 2 large eggs
  • 1/2 tsp vanilla extract
  • 1/2 tsp almond extract
  • 1/4 tsp cinnamon
  • 1/4 tsp salt
  • 3/4 tsp baking powder
  • 1 cup milk
  • 2 cups uncooked old fashioned rolled oats

Directions

  1. Pull the cherries from the freezer and let them thaw. Set your oven to 375 degrees.
  2. In a large bowl, whisk the apple sauce with the eggs, vanilla and almond extracts, cinnamon, salt, and baking powder. When that mixture is even, pour in the milk and whisk again until it looks smooth.
  3. Give the cherries a rough chop, then add them to the bowl with the liquid ingredients. Add the rolled oats too, and switch to a spoon to stir everything together.
  4. Mist an 8"x8" or 9"x9" baking dish lightly with non-stick spray. Scrape in the oat mixture, spread it into the dish, and bake for 40-45 minutes, until the top is golden brown and the center is no longer sticky. Cut into 6 portions and serve warm.
