Ingredients
- 2 cups all purpose flour
- 2 teaspoons baking powder
- 1 teaspoon salt
- 1/4 cup of white granulated sugar plus 2 Tbsp sugar
- 1 teaspoon ground cinnamon
- 10 Tbsp unsalted butter, room temperature
- 2 eggs, beaten
- 1 cup whole milk
- 1 medium tart green apple, cored, peeled and sliced into 1/4-inch thick slices
- 4 Tbsp brown sugar
- 4 Tbsp flour
- 1/4 teaspoon cinnamon
- 1 Tbsp butter, cut into small cubes
Directions
- Heat your oven to 375 degrees F (190 degrees C). Grease a 9-inch pie pan; a springform pan or square baking pan will also do the job.
- In a medium bowl, give the flour, baking powder, and salt a good, brisk whisk until everything is evenly combined.
- In a separate small bowl, stir together 2 Tbsp of the sugar and the cinnamon, then keep it nearby.
- With an electric mixer, cream the butter with the remaining 1/4 cup sugar. Mix in the eggs until the batter is blended. Add the flour mixture in 3 additions, alternating with the milk, and beat after each addition just until combined.
- Spoon half of the batter into the prepared baking dish. Arrange the apple slices over it so the batter is just covered, overlapping the slices a bit if you need to. Scatter the cinnamon-sugar mixture over the apples, then spread the remaining batter on top.
- For the streusel, combine the brown sugar, flour, and cinnamon in a small bowl. Sprinkle it over the cake, then dot the top with the butter.
- Bake at 375 degrees F (190 degrees C) for 30-35 minutes, until the cake is golden brown and a tester inserted in the center comes out clean.
