Ingredients
- 2 1/4 pounds apples
- 1 pinch grated lemon zest
- Superfine sugar
Directions
- Quarter the apples, trimming away the stems and any bruised or damaged spots, but leave the peels and cores in place. Set them in a nonreactive pan with 1/2 cup water. Cover the pan and cook gently over low heat for 15 to 20 minutes.
- Blend the cooked apples until completely smooth. Press the puree through a fine-mesh strainer with a wooden spoon so the seeds are left behind.
- Mix in the lemon zest and sugar. Spoon the puree into a serving dish and chill before serving.
