Ingredients
- 5 strips bacon
- 2 cups all-purpose flour
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon salt
- 3/4 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 2 large eggs
- 1 cup semisweet chocolate chips
Directions
- Cook the bacon in a skillet until it is well browned and crisp, about 5 minutes. Move it to a paper towel-lined plate so it can drain, then let it cool completely. Put the cooled bacon in a food processor and pulse just until roughly chopped. Set it aside.
- In a medium bowl, whisk together the flour, baking powder, and salt. In a large bowl, use an electric mixer to beat the butter and sugar until pale and fluffy, 2 or 3 minutes. Beat in the eggs one at a time, mixing after each addition. Add the flour mixture and beat until blended. Stir in the bacon and chocolate chips. Pull the dough together into a ball and divide it in half. Wrap each half in plastic and refrigerate for 20 to 30 minutes, until firm.
- Line a baking sheet with parchment paper. Preheat the oven to 350ºF. On a floured surface, roll each piece of dough into a log 12 to 14 inches long. Move the logs to the baking sheet, leaving 3 to 4 inches between them. Bake for about 30 minutes, until lightly golden and dry on the surface.
- Take the baking sheet out of the oven. Lower the oven temperature to 300ºF. Let the logs cool for 15 minutes. Move them to a cutting board. With a serrated knife, cut the logs on the diagonal into 1/2-inch thick slices. Set the slices upright on the baking sheet and bake for 20 to 30 minutes, until dry and golden.
