Baked Apricots with Brown Sugar Streusel

Ingredients

  • 2 apricots, halved and pitted
  • 3 tablespoons old fashioned oats
  • 1 tablespoons sliced almonds
  • 1 1/2 tablespoons light brown sugar
  • 1/4 teaspoon cinnamon
  • 1/8 teaspoon ground ginger
  • Pinch salt
  • 3 tablespoons unsalted butter, melted
  • Yogurt for serving, optional

Directions

  1. Set a rack in the center of the oven, then heat the oven to 425 degrees F. Arrange the apricots in a baking dish with the cut sides facing up.
  2. In a small bowl, stir the oats, almonds, brown sugar, cinnamon, ginger, and salt until evenly combined. Pour in the melted butter and mix until the topping is thoroughly moistened.
  3. Spoon the oat mixture evenly over the apricot halves, piling it on each piece of fruit. Bake until the topping is golden and the apricots have softened, about 25 minutes. Cool briefly, then serve warm or at room temperature, with yogurt alongside if desired.
