Ingredients
- 2 1/2 cups cooked, shredded chicken breast
- 12 6-inch corn tortillas
- 1 1/2 Tbsp canola oil, divided
- 1/2 cup finely chopped yellow onion
- 1 clove garlic, minced
- 6 Tbsp salsa verde
- 3 oz cream cheese, diced into 1-inch pieces
- 1 tsp chili powder
- 1/2 tsp paprika
- 1/2 tsp ground cumin
- 1 Tbsp fresh lime juice
- Salt and freshly ground black pepper
- 2 Tbsp chopped cilantro
- 1 cup shredded monterey jack cheese
Directions
- Heat the oven to 425 degrees. Warm the tortillas in a 12-inch non-stick skillet over medium-high heat for about 10 – 15 seconds on each side, just until they bend more easily. As soon as each tortilla is warmed, move it to an airtight container or onto a plate and cover it with a pan lid. Do the same with the rest of the tortillas, then set them aside.
- In that same skillet, warm 1/2 Tbsp of the canola oil over medium-high heat. Add the onions and cook until they are tender and lightly golden, about 4 minutes, stirring in the garlic for the last 30 seconds.
- Take the skillet off the heat, then stir in the salsa verde and cream cheese. Turn the heat down to medium-low and put the skillet back on the burner. Cook, stirring the whole time, until the cream cheese is fully melted.
- Stir in the chili powder, paprika, cumin and lime juice, then add salt and pepper to taste. Remove the skillet from the heat and fold in the shredded chicken, cilantro and Monterey jack cheese.
- Spoon about a scant 1/4 cup of the chicken filling in a line near one edge of a tortilla, about 1-inch in from the side, then roll it up tightly toward the opposite edge. Set it on a parchment paper lined baking sheet. Continue with the remaining tortillas and filling, leaving at least 1-inch between the rolled tortillas on the baking sheet so they toast evenly.
- Lightly brush the tops and sides of the rolled tortillas with the remaining 1 Tbsp canola oil. Bake until the taquitos are crisp and the edges have turned golden brown, about 18 – 20 minutes. Serve warm with dipping of choice, such as sour cream, salsa verde, guacamole, tomato salsa or hot sauce.
