Ingredients
- 2 lbs – 2 1/4 lbs boneless skinless chicken breast halves
- 1/4 cup whole grain, coarse mustard
- 2 Tbsp dijon mustard
- 2 Tbsp yellow mustard
- 1/4 cup + 2 Tbsp honey
- 3 tsp olive oil, divided
- Salt and freshly ground black pepper
- 1/2 cup chopped yellow onion
- 2 cloves garlic, minced
- 4 small sprigs rosemary
Directions
- Get your oven heating to 375 degrees F. In a mixing bowl, whisk the coarse mustard, dijon mustard, yellow mustard, honey and 2 tsp olive oil until smooth and well combined.
- Coat a large baking dish with non-stick cooking spray, using one with enough room for the chicken to fit without crowding.
- Warm the remaining 1 tsp olive oil in a small skillet over medium heat. Add the onion and cook for 3 minutes, then stir in the garlic and cook for 30 seconds more. Transfer the onion mixture to the prepared baking dish and spread it out evenly.
- Sprinkle both sides of each chicken breast with salt and pepper, then place the chicken on top of the onion layer in the baking dish.
- Pour the mustard mixture over the chicken as evenly as you can, making sure each piece gets fully coated. Tuck the rosemary sprigs between the chicken breasts, then cover the dish with foil.
- Bake for 20 minutes, then remove the foil and continue baking until the chicken is cooked through, about 15 – 25 minutes longer. Serve warm, spooning extra sauce over the chicken if you like.
