Ingredients
- 2 med. peaches
- 1/2 cup blueberries
- 1 1/2 cups milk
- 1 cup plain yogurt
- 1 large egg
- 1/4 cup brown sugar
- 2 cups old-fashioned oats
- 1/2 tsp baking powder
- 1/4 tsp baking soda
- 1/4 tsp salt
- 1 tsp ground ginger
- 1/4 tsp cinnamon
Directions
- Set the oven to 350 degrees. Rinse the peaches, then chop them into chunks. Coat an 8x8 baking dish with non-stick spray, and scatter the peaches and blueberries across the bottom.
- In 1 bowl, whisk the milk, yogurt, egg, and sugar until smooth. In another bowl, mix the oats, baking powder, baking soda, salt, ginger, and cinnamon. Bring the wet and dry mixtures together, stirring until everything is evenly combined. Pour it into the baking dish over the fruit.
- Cover the pan with foil so the oats can steam and stay moist, then slide it into the hot oven. Bake for 20 minutes. Take off the foil at 20 minutes, then keep baking until the top turns golden brown, about 25 minutes more.
- Serve it warm with cold milk, whipped cream, vanilla yogurt, or all by itself.
