Ingredients
- 1 can pumpkin purée
- 1/2 cup brown sugar
- 2 large eggs
- 1/2 Tbsp pumpkin pie spice
- 1/2 tsp salt
- 3/4 tsp baking powder
- 1/2 tsp vanilla extract
- 1 1/2 cups milk
- 2 1/2 cups dry old-fashioned oats
Directions
Heat the oven to 375 degrees. Put the pumpkin purée in a large bowl, then add the brown sugar, the eggs, the vanilla, the pumpkin pie spice, the salt, and the baking powder; whisk until the mixture is smooth. Pour in the milk and whisk again. Stir in the dry oats until they are evenly coated with the pumpkin mixture. Use non-stick spray to coat your 8×8 baking dish, or a pan that is about the same size. Add the pumpkin-oat mixture to the dish. Bake for 45 minutes, until the middle no longer appears wet and the edges have turned lightly golden brown. Serve it hot from the oven, or refrigerate it until you are ready to serve. Eat it cold or warm it back up. Finish with milk, maple syrup, whipped cream, or nuts.
