Balsamic Dijon Pork Chops

Ingredients

  • 1 lb 1" thick bone-in pork chops
  • 1/4 cup flour
  • 1 teaspoon granulated garlic or garlic powder
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 tablespoon butter
  • 2 tablespoons light brown sugar
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon dijon mustard

Directions

  1. Warm the butter in a large non-stick skillet or a well-seasoned cast iron skillet over medium heat. Once it foams and takes on a little color, tilt the skillet so the butter coats the bottom.
  2. In a pie plate or a shallow, flat-bottomed bowl, mix the flour, garlic, salt, and pepper. Coat each pork chop in the flour mixture on every side, then set the chops into the hot pan. Leave them alone to sear for about 3 minutes.
  3. While the pork cooks, mix the brown sugar, balsamic, and mustard. Turn the chops over once they are golden on the first side. Spoon half of the balsamic mixture over the pork and cook 3 minutes longer.
  4. Flip the chops again, then add the rest of the sauce over the top. Put a lid on the skillet, reduce the heat to low, and cook for 2-4 minutes more. Transfer the pork to a plate and spoon the pan juices over it. Rest for 5 minutes before serving.
