Ingredients
- 3-4 handfuls fresh spinach, washed and dried
- 1/4 red onion, cut into thin strips about 1 1/2 inches long
- 6-8 mushrooms, sliced
- 2 T extra virgin olive oil, plus more for sauteeing veggies
- 2 tsp. balsamic vinegar
- 1/4 tsp. garlic puree or crushed fresh garlic
- 2 T crumbled Feta cheese
Directions
- Place the spinach in a large mixing bowl, roomy enough that you can toss the salad without launching leaves everywhere.
- In a small bowl, whisk together the balsamic vinegar, garlic puree, and olive oil.
- Warm a little olive oil in a 12 inch frying pan.
- Add the onions and cook them for 2 minutes, just until they begin to soften.
- Stir in the mushrooms and cook for 3-4 minutes, until they have softened and the moisture they give off has cooked away.
- Pour in the dressing mixture and let it just reach a gentle simmer, then immediately pour it over the spinach and toss.
- Divide the salad between 2 serving plates, scatter the feta on top, and serve.
