Ingredients
- 2 to 3 very ripe bananas, peeled
- 1/3 cup melted butter, unsalted or salted
- 1 teaspoon baking soda
- Pinch of salt
- 3/4 cup sugar
- 1 large egg, beaten
- 1 teaspoon vanilla extract
- 1 1/2 cups of all-purpose flour
Directions
- Set the oven for 350 degrees F, which is 175 degrees C, and coat a 4x8-inch loaf pan with butter.
- Drop the ripe bananas into a mixing bowl and work them with a fork until they are completely smooth. Pour in the melted butter and stir it through the bananas.
- Add the baking soda and salt, giving the bowl a quick stir. Next add the sugar, the beaten egg, and the vanilla extract, stirring as you go. Work in the flour after that.
- Transfer the batter to the buttered loaf pan. Bake at 350 degrees F, or 175 degrees C, for 50 minutes to 1 hour, until a tester poked into the center comes out clean.
- Take the pan out of the oven and give the bread a few minutes to cool in the pan. After that, lift the banana bread out of the pan and let it cool all the way before serving. Cut into slices and serve; if the loaf wants to crumble, a bread knife makes cleaner slices.
