Banana Nut Muffins
Tender banana muffins with melted butter and crunchy walnuts or pecans, easy to mix for a cozy homemade bake.

Ingredients
- 2 to 3 ripe bananas, thoroughly mashed
- 1/3 cup melted butter
- 3/4 cup sugar
- 1 large egg, beaten
- 1 teaspoon vanilla extract
- 1 Tbsp strong brewed coffee or espresso, or a pinch of instant coffee granules mixed with a Tbsp of water
- 1 teaspoon baking soda
- Pinch of salt
- 1 1/2 cup of flour
- 1 cup chopped walnuts or pecans
Directions
- Heat your oven to 350 degrees F, then tuck paper liners into the muffin pan.
- In a large bowl, mash the bananas until they are completely soft. Pour in the melted butter and stir it through, then mix in the sugar, egg, coffee, and vanilla extract.
- In another bowl, whisk the flour with the baking soda and salt.
- Add the flour mixture to the banana mixture in thirds, stirring each time only until it blends in. Be gentle here, because too much mixing makes the muffins heavy and tough. Gently fold through the chopped walnuts or pecans.
- Spoon the batter lightly into the prepared muffin tin. Bake at 350 degrees F for 20-25 minutes. To check them, press gently on a muffin top; when it springs back, it is ready. You can also slide a skewer or other tester into the center of a muffin; it should come out clean.
- Move the muffins to a rack to cool.
