Banana Split S'more Whoopie Pies

Ingredients

  • 1 cup butter, softened
  • 1 cup sugar
  • 2 eggs
  • 1 cup mashed very ripe bananas
  • 1/2 cup heavy cream
  • 1 teaspoon vanilla
  • 3 cups all purpose flour
  • 1 1/2 teaspoons baking soda
  • 1/2 teaspoon salt
  • 1/2 cup chopped walnuts
  • 1/2 cup small marshmallows
  • For the filling:
  • 2 Hershey's Milk Chocolate bars
  • 12 scoops Neapolitan ice cream
  • 1/2 cup finely crushed graham crackers

Directions

  1. Set out 2 baking sheets and line them with parchment paper. Heat the oven to 375 degrees F. In a stand mixer with the paddle attached, beat the butter, sugar, and eggs until well combined.
  2. Add the bananas, cream, and vanilla, and mix them in. In a separate bowl, sift the flour, baking soda, and salt together, then add that to the wet ingredients and stir until incorporated. Gently fold in the nuts and marshmallows.
  3. Scoop rounded tablespoons of dough onto the prepared baking sheets. Bake for 10 minutes, until the edges have a little color. If the marshmallows leave small craters in the cookies, no worries. They will still taste great.
  4. After the cookies have cooled for about 15 minutes, turn them over onto waxed paper or parchment so the flat bottoms face up. Set one square of chocolate on each cookie bottom. Let the warmth of the cookies soften the chocolate for about 2-3 minutes, then use a spoon to spread it across the exposed surface. Allow the chocolate to set for about half an hour, or until it is firm.
  5. Add one scoop of Neapolitan ice cream to one cookie half, making sure you get some of each flavor, then top it with a second cookie, with the chocolate facing down, to make a sandwich. Press crushed graham crackers onto the ice cream showing around the edges. Wrap the sandwich in waxed paper and freeze for at least an hour to firm up. Continue the same way with the remaining cookies.
  6. Variation: If you would rather skip the ice cream, use two toasted marshmallows in each sandwich instead. Add crushed graham crackers around the sides. Serve warm.
