Ingredients
- 1/2 cup olive oil
- 2 large onions, diced
- 1 garlic clove, minced
- 4 ounces canned diced tomatoes
- 3 ounces tomato paste
- 1/4 cup sugar
- 1 tablespoon fresh oregano, chopped
- 1 tablespoon fresh basil, chopped
- 1 cup barbecue sauce
- 1 1/2 teaspoons kosher salt
- 16 ounces spaghetti
- 1 cup pulled pork
Directions
- Set a large pot of water on the stove and bring it to a boil. While that gets going, add the oil to a heavy-bottomed 12-inch stainless steel skillet over medium-high heat. Once the oil looks glossy and rippled, stir in the onions and garlic. Cook, moving everything around often with a wooden spoon, until the onions are translucent, about 5 minutes.
- Stir the diced tomatoes and tomato paste into the skillet, lower the heat to medium-low, and let the mixture simmer for 5 minutes. Add the sugar, oregano, and basil, then mix everything thoroughly and cook for 5 minutes more. Scrape the sauce into a blender, add the barbecue sauce, and blend until smooth. Add salt to taste.
- Drop the spaghetti into the boiling water and cook it according to the package directions. When it’s ready, drain it in a colander. Put the pasta back into the empty pot, add the barbecue sauce, and toss well. Stir in the pork, then serve.
