Basil Vinaigrette for Drizzling on Tomatoes, Veggies, Chicken, or Fish
A bright basil vinaigrette to spoon over tomatoes, roasted vegetables, chicken, or fish when they need a fresh, herby finish.
Prep 5 min · Makes about 3 cups

Ingredients
- 3 parts of your favorite low sugar vinaigrette dressing
- 1 part basil puree or Fresh-Frozen Basil
- 1 cup fresh basil leaves, washed and dried well
- 1/2 cup best quality extra virgin olive oil
Directions
- Stir the salad dressing together with the basil puree until they are fully combined, or blend them in a food processor or mini-blender if you want a smoother texture.
- Spoon the vinaigrette over sliced tomatoes, tomatoes with goat cheese, or tomatoes layered with fresh mozzarella. It is also lovely over roasted or grilled vegetables, grilled chicken, or grilled fish.
- To make the basil puree, place the basil in the bowl of a food processor. Start the machine, then stream the oil in through the feed tube.
- Continue processing until the basil is chopped very finely and worked into the olive oil. You should still notice tiny flecks of basil, but they should be quite small.
- The puree freezes nicely and can be used later to add basil flavor to pasta sauce.
