BBQ Beef Stuffed Potatoes

Ingredients

  • 2 large russet potatoes, one lb each
  • 1 tsp vegetable oil
  • 1 pinch salt
  • 1 cup Multi-Purpose Shredded Beef
  • 1/4 cup + 2 Tbsp bbq sauce
  • 1/4 cup shredded cheddar
  • 1 whole green onion
  • 2 Tbsp sour cream

Directions

  1. Heat the oven to 400 degrees. Scrub the potatoes thoroughly, then pat them dry with a clean dish towel. Use a fork to poke holes all around each potato. Coat each potato with about 1/2 teaspoon vegetable oil, then season lightly with salt. Set them on a foil-lined baking sheet and bake for 1 hour, or until they are soft through the center. To check them safely, squeeze with an oven mitt or clean dish towel between your hand and the hot potato.
  2. As the potatoes cook, thaw the shredded beef and warm it through. Stir in 1/4 cup of your favorite BBQ sauce. Slice the green onion thinly.
  3. When the potatoes are done, cut each one lengthwise from tip to tip. Protect your hands with a dish towel or oven mitt, then press the ends of each potato toward the middle so it opens up. Spoon half of the BBQ beef into each potato, then add about 2 tablespoons shredded cheese on top. Slide the potatoes back into the warm oven for a few minutes, just until the cheese melts.
  4. After the cheese has melted, spoon about 1 tablespoon BBQ sauce over each potato and scatter the green onions on top. Finish each one with a dollop of sour cream and serve.
