BBQ Chicken Sheet Pan Pizza

Ingredients

  • 1 pound pizza dough, store-bought or homemade, room temperature
  • 2 tablespoons olive oil
  • 2 cups cooked shredded chicken
  • 1 cup BBQ sauce, such as Hunt's Hickory BBQ Sauce
  • 6 ounces shredded mozzarella cheese, divided
  • 1/2 red onion, thinly sliced
  • 1 jalapeño, thinly sliced

Directions

  1. Heat the oven to 450ºF and move a rack to the lowest position. Put the dough in the center of the baking sheet and drizzle it with the oil. Turn the dough over and around so it gets nicely coated, letting some of that oil spread across the baking sheet too.
  2. Gently work the dough outward until it reaches the edges of the baking sheet, taking care not to tear it. If the dough keeps shrinking back or feels stubborn, it’s probably still too cold; cover it with plastic wrap and give it 10 minutes to rest, then keep going.
  3. In a bowl, stir together the shredded chicken and barbecue sauce. Spread that mixture evenly over the dough, leaving a small border around the edges.
  4. Scatter 2/3 of the cheese over the top, then add the red onion and jalapeño, and finish with the rest of the cheese. I’m partial to cheese both under and over the toppings, but you can layer it your way.
  5. Place the pan on the lowest shelf of the oven and bake until the cheese is melted and the pizza is golden brown, about 15 minutes. Slice into squares and serve hot.
