Beef Burrito Casserole

Ingredients

  • 1 Tbsp cooking oil
  • 1/2 lb ground beef
  • 1 clove garlic, minced
  • Pinch of salt
  • 4 cups cooked rice
  • 15 oz can black beans
  • 16 oz jar salsa
  • 4 green onions, divided
  • 1/2 Tbsp chili powder
  • 4 oz cream cheese
  • 1 cup shredded cheddar

Directions

  1. Set your oven to 350ºF. Warm the cooking oil in a skillet, then add the beef, garlic, and a pinch of salt. Cook over medium heat until the beef is completely browned, then pour off extra fat if you need to.
  2. Tip the canned beans into a colander, rinse them well, and let them drain. Cut the green onions into slices. In a large bowl, combine the beans, half the green onions, cooked rice, browned beef, salsa, and chili powder, stirring until everything is evenly mixed.
  3. Spray a 3 quart casserole dish with non-stick spray. Spoon in half of the rice and beef mixture and spread it over the bottom. Dot the cream cheese over the top in small bits, spacing it around, then add the rest of the rice and beef mixture over it.
  4. Cover the casserole with foil so the rice stays moist in the oven, then bake it for 25 minutes. When those 25 minutes are up, take off the foil and scatter the shredded cheddar over the top. Return the dish to the oven for 5-10 minutes, just until the cheese has melted. Sprinkle on the remaining sliced green onions right before serving.
