Beef Enchiladas
Cheesy beef enchiladas baked in red sauce make a hearty, comforting dinner with tender tortillas, green chiles and a fresh cilantro finish.

Directions
- Heat the oven to 350°F. Coat a 9 x 13-inch baking pan with cooking spray, then put it to the side.
- Place the ground beef in a large saute pan over medium-high heat. Cook until browned and cooked all the way through, breaking it into small bits with a spatula as it goes. Lift the beef out with a slotted spoon and move it to a separate bowl. Leave 1 tablespoon of the drippings in the pan and pour off the rest.
- Add the onion to the same saute pan and cook it in the reserved 1 tablespoon of grease for 5 minutes, until softened and translucent. Stir in the green chiles and beans, then cook for 1 minute, stirring now and then, just to heat them through. Take the pan off the heat and mix in the cooked ground beef and 1/4 cup enchilada sauce until everything is combined. Set the filling aside.
- For assembly, arrange the tortillas, enchilada sauce, beef mixture and cheese so you can work easily. Place a tortilla on your work surface and spread 2 tablespoons of sauce over it. Spoon about 1/8th of the beef mixture in a strip down the middle, then add 1/3 cup cheese over the filling. Roll the tortilla closed and place it in the prepared baking dish. Continue the same way with the remaining ingredients. Spoon any remaining enchilada sauce over the rolled tortillas, then scatter the rest of the shredded cheese across the top.
- Bake, uncovered, for 20 minutes. Take the pan out of the oven and serve right away, with chopped fresh cilantro on top if you’d like.
