Ingredients
- 2 Tbsp olive oil
- 1 medium onion
- 2 cloves garlic
- 12 oz beer
- 1 xlg bouillon cube
- 2 cups water
- 1 lb chopped collard greens
- 1 Tbsp brown sugar
- 1/2 tsp red pepper flakes
- Cracked black pepper to taste
Directions
- Cut up the onion and finely mince the garlic. Warm the olive oil in a large pot over medium heat, then cook the onion and garlic until they have softened.
- If you are starting with fresh collard greens, wash them well, strip away the stems, and slice the leaves into 2 inch pieces. Pre-washed, chopped bagged collards can go straight in.
- Pour in the beer, then add the bouillon cube, water, collard greens, brown sugar, red pepper flakes and black pepper. Cover the pot and bring everything to a boil.
- When the liquid reaches a boil, the greens should have collapsed enough that you can stir the pot without making a mess. Mix everything together well, cover again, turn the heat down to low, and simmer until the collards are as tender as you like; 2 hours is the cooking time used here. Stir about every 15 minutes as they cook.
