Ingredients

  • 2 cups all purpose / plain flour
  • 1/4 cup granulated sugar or sweetener
  • 4 teaspoons baking powder
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 cups milk
  • 1/4 cup butter, melted
  • 2 teaspoons pure vanilla extract
  • 1 large egg

Directions

  1. In a large bowl, stir together the flour, sugar or sweetener, baking powder, baking soda and salt. Create a hollow in the middle, then add the milk, melted butter that has cooled slightly, vanilla and egg. Whisk the wet ingredients in the center first, then gradually bring in the dry mixture, folding just until the batter is mostly smooth. A few small lumps are completely fine. The mixture should be thick and creamy; if it is so thick that it will not flow neatly from a ladle or measuring cup, fold in extra milk a couple tablespoons at a time until it reaches the consistency you want. Leave the batter to rest while you warm the cooking surface.
  2. Warm a nonstick pan or griddle over low-medium heat, then swipe it with a little butter so it is lightly coated. Add 1/4 cup of batter to the pan and use the back of your ladle or measuring cup to nudge it into a circle.
  3. Once bubbles show up on top and the bottom has turned golden, turn the pancake with a spatula and cook the other side until golden as well. Continue the same way with the rest of the batter.
  4. Serve with honey, maple syrup, fruit, ice cream or frozen yoghurt, or eat them plain.
