Ingredients
- 1 cup granulated sugar
- 1/2 cup packed light-brown sugar
- 1/4 tsp salt
- 1/4 tsp ground cinnamon
- 1/2 cup unsalted butter, diced into 4 pieces
- 1/2 cup milk
- 1/2 cup Biscoff Cookie Spread
- 1 tsp vanilla extract
- 3 cups quick oats
Directions
- Put both sugars in a medium saucepan, then add the salt, cinnamon, butter, and milk. Set the pan just above medium heat and cook, stirring often, until the mixture comes to a boil.
- Once it starts boiling, let it bubble undisturbed for 45 seconds. Take the pan off the heat and, right away, whisk in the Biscoff and vanilla until everything is smooth, then stir in the quick oats.
- Portion the mixture by spoonfuls onto parchment or wax paper. Using 2 spoons makes this neat: 1 lifts the mixture, and the other slides it off onto the paper. Leave the cookies to cool until they set.
- Biscoff Cookie Spread is often stocked near the peanut butter in grocery stores.
