Ingredients
- 1 pound ground beef sirloin
- 1 pound ground beef chuck
- Salt and freshly ground black pepper to taste
- Vegetable oil cooking spray
- Six 1/2-inch-thick slices white onion
- Canola oil
- 3 ounces blue cheese, cut into 6 slices or crumbled
Directions
- Combine the beef in a bowl with salt and pepper, then use your hands to work everything together thoroughly. Shape the mixture into 6 patties, and chill them until it is time to cook.
- Set up a charcoal or gas grill. Coat the grill rack lightly with vegetable oil cooking spray, then start the coals or heating elements and allow the grill to get hot.
- Coat the onion slices with oil, then season them with salt and pepper. Put them around the cooler outer area of the grill and cook for 5 or 6 minutes, just until they start to soften. Turn them over and cook the second side for 8 to 9 minutes, until they are tender and lightly browned. Take the onions off the grill, set them aside, and keep them warm.
- Cook the burgers for 3 to 4 minutes on the first side for medium-rare. Turn the burgers over, then add a slice of cheese to each one, or scatter about 1/2 ounce crumbled cheese over each patty. Cover the grill and cook for 3 to 4 minutes more, until the cheese is melted and the burgers are medium-rare. Finish with the grilled onions and serve.
