- 1/2 cup unsalted butter, at room temperature
- 1 cup sugar
- 1 egg
- 1/4 cup milk
- 1/2 teaspoon almond extract
- 1/2 teaspoon vanilla extract
- 2 teaspoons lemon zest
- 1/2 cup slivered almonds, lightly toasted
- 1 cup fresh blueberries
Directions
- Whisk the flour, baking powder, and salt in a medium bowl until they look evenly mixed.
- In a large bowl, use an electric beater to cream the butter and sugar until the mixture is thick and airy, about 3 minutes.
- Beat in the egg until it disappears into the butter mixture.
- Pour in the milk, almond extract, and vanilla extract, then add the lemon zest. Beat everything together until combined.
- Add the flour mixture to the large bowl and beat only until the dough comes together evenly. Stir in the almonds, then carefully fold in the blueberries. Cover the dough with plastic wrap and refrigerate for 30 minutes.
- Preheat the oven to 375 degrees F. Line 2 baking sheets with parchment paper.
- Scoop the dough in rounded tablespoons onto the lined baking sheets. Bake until the cookies are golden, about 15 minutes.
